How to Make Spicy Tuna Rolls
Prepare Sushi Rice:
Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and 1 1/4 cups of water in a rice cooker or pot. Cook according to the manufacturer’s instructions or bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is tender and the water is absorbed.
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold the vinegar mixture into the cooked rice while it is still warm. Allow the rice to cool to room temperature.
Prepare Spicy Tuna Filling:
In a mixing bowl, combine finely diced tuna, mayonnaise, Sriracha sauce (adjust to your desired level of spiciness), sesame oil, and soy sauce. Mix well until the tuna is coated evenly with the spicy mayo mixture.
Assemble Spicy Tuna Rolls:
Place a bamboo sushi rolling mat on a clean surface. Lay a sheet of nori, shiny side down, on the mat.
Wet your hands with water to prevent sticking. Spread a thin, even layer of sushi rice over the nori, leaving a 1-inch border at the top edge.
Add Fillings:
Arrange a line of spicy tuna filling horizontally across the center of the rice-covered nori. Top with julienned cucumber and thinly sliced avocado.
Roll the Sushi:
Lift the edge of the bamboo mat closest to you with both hands, using your fingers to hold the fillings in place. Roll the mat away from you, enclosing the fillings in the nori and rice.
Press gently on the bamboo mat to shape the roll into a compact cylinder. Continue rolling until you reach the top edge of the nori. Moisten the top edge with water to seal the roll.
Slice and Serve:
Using a sharp knife, slice the sushi roll into 6-8 pieces. Wipe the knife with a damp cloth between slices to keep them clean and neat.
Arrange the spicy tuna rolls on a serving platter. Serve with pickled ginger, wasabi, and soy sauce on the side.
Chef’s Note
Sushi Grade Tuna: It’s essential to use sushi-grade tuna that is fresh and safe for raw consumption. If you’re unsure, ask your fishmonger for advice or purchase from a reputable seafood supplier.
Customization: Feel free to customize the fillings to your liking. Add ingredients such as tobiko (flying fish roe), thinly sliced jalapeños, or fresh herbs for added flavor and texture.
Sushi Rolling Tips: Practice makes perfect when rolling sushi. Start with a small amount of filling to ensure the roll is not overstuffed, which can make it difficult to roll and slice neatly.
Storage: Spicy tuna rolls are best enjoyed fresh. If you need to store them, wrap tightly in plastic wrap and refrigerate for up to 1 day. Serve chilled.
